My obsession

My obsession right now?

Pumpkin.

That's right, pumpkin. Don't ask me why I LOVE pumpkin, but only in the Fall. I should really starting eating it all year long. Oh well. "Pumpkin what," you may ask. Pumpkin chocolate chip cookies, pumpkin chocolate chip bread, pumpkin pie...pumpkin anything!

I made some pumpkin choco chip cookies last weekend and probably have eaten about 2 dozen myself. mmmm...

Anyone have any great pumpkin recipes to share (preferably involving chocolate somehow)?

You actually make pumpkin chocolate chip cookies?! We always buy ours from Smith's. You'll have to give me a copy of your recipe!

Check out Amy's blog...Super Healthy Kids. She has a recipe for pumpkin dip...you know, for apples, graham crackers, etc. It looks easy, just mixing canned pumpkin with vanilla pudding mix and spices.

I've been feeling the same way. We had a pumpkin pie at the Thelins this weekend, which Heidi made from an actual pumpkin she cooked in the oven. It was the best pie EVER!

Did you know you can make muffins by just mixing a dry cake mix (any flavor) with a can of pumpkin and baking them at 350? NO OTHER INGREDIENTS. It's low fat, nutritious, and works with chocolate, yellow, or spice cake mix. If you use a small can of pumpkin they're a thicker consistency, or a large can makes them softer. Add some chocolate chips if you want.

Hey, I'm the one always calling my grandchildren "little pumpkin."

I LOVE pumpkin anything as well. Pumpkin pie is my all time favorite dessert. I always look forward to fall so that I can make it. I was just thinking about (or obsessing about as you put it) pumpkin chocolate chip cookies yesterday. I think I'll have to make some now.

I'm so with you! I've already made one batch of pumpkin cookies, and need to make another. My favorite recipe is the one in my cookbook that says "Mom's version." Though they are decent coming out of the oven, they are actually DIVINE once they have cooled and sat for a few hours. OH, and ADD CHOCOLATE CHIPS. (In a fit of pure insanity, I thought I preferred these cookies without chocolate chips and made half the batch without. They were good, but not nearly as delectable.)

Yum! Pumpkin and chocolate is one of world's best combinations.

And you DO know that pumpkin is very nutritious, right? Baby Ike must love all the little pumpkin vitamins, so keep it up!

hey hey -- just found a great recipe for pumpkin pecan mini muffins - you make them with canned pumpkin and low fat vanilla yogurt. good stuff
